Sweet Potatoes

Sweet Potatoes

1 Costco bag Sweet Potatoes
6 Tbsp Butter
3 Tbsp Heavy Cream
3/4 tsp Salt
3/4 tsp Pepper
1 1/2 tsp Sugar

Peel potatoes.  Cut to about 1/4 inch slices.  On the stove with a lid, cook for about 30 mins starting at medium heat and then turning to low.  Stir often.  Once soft mash potatoes.  You can add an extra 3 tsp of heavy cream while mashing.
